This is so cool! I only kill a few sheep a year, but I’d be open to case skinning one or two in this method if you know of any US based cheese makers who would be interested in trying the technique.
For free of course, though I’d want to try the cheese if there was an opportunity. Hides can be wet salted using table salt, which results in a compact and shippable preserved hide, as is often done for tanning. The hide could also be lightly smoked. Simply rehydrate and rinse and you’re good to go.
This sounds like how they do it in Tusheti. The technique is probably in the tying off of the legs to create an airtight vessel. I have a video of the process…

Case skinning…I didn’t know there was a name! I may be able to think of a few…let me know when you are harvesting.
