Thanks Trevor, you really pushed me to challenge my own process and now I make cheese with natural culture that's always tasty.

I plan on harvesting a ram lamb for rennet this weekend if you are around Eastern Oregon I could use your knowledge...

I can share cheese and milk in exchange, as well as home cooked lamb tacos that are pretty good..
