Lovely research into their processes...when I first saw the title, I thought it was a reference to the Parsi story ("like sugar in the milk")!

Can you give an idea of the kind of milk they are using - like the fat content? More like a Jersey or more like a Holstein? I am very new to a journey of fresh milk and figuring out its uses but I already know the value of that blessed cream.
