So obvious, the love and care that she feels for this process and the old family connection. I especially noticed the lace work beneath each of her little mounds of cheese.

Yeah, I’ve never seen that but it fits the whole vibe. Lace on wood slats, to allow the cheese to dry. Some cheeses have such laborious makes, you would only do it out of love and a sense of heritage.
