You should stop in Paonia, co when You come through - we’ve got lots of Rae milk and pastoral culture and a really receptive community to milky ferments and lifeways. We have a cool community butcher shop too owned by folks who do a lot of cool stuff but you wouldn’t be able to Google them online.
also the Learning Council is finishing a commerical kitchen space, also right downtown and hosts tons of workshops and also could be a neat place to do it. Depending on if you want to be more on a farm, or more in a kitchen. https://thelearningcouncil.org/
Thistle Whistle could be cool- they do a lot of seed, garden, beekeeping workshops and seems like people expect a slew of workshops from them every season. There could also be some other spots with folks who do more with animals specifically, i'll have to think. would the workshop be cheese making, hands-on, and potentially a talk about your work? Is that what sour milk school basically entails? There's also the Paonia Food CLub, my friend's own, its a butcher shop but they do lots of cheese making, butter making, kefir etc.. there (not for sale) from their own cow's. milk and goat's milk at the butcher shop right downtown. snowline is a raw dairy here that is self-serve up the mountain and is super cool and a hidden gem.
